(I have no clue if you've seen Ersatz, but if you haven't and like surreal horror, I really recommend it).
Mar's eyes were directly inspired by how God is depicted in the pilot!
When it comes to lore, I mentioned in Maria's introduction post that he prays to cope with everything that happens around him. Prays for guidance, safety for himself and his friends, the ability to help others (especially cos he got sent out in the middle of training), for the war to end soon and so many other things. Because Mar still has faith in God, despite the circumstances.
Originally, Ma eyes were completely normal. They only changed after Mar was killed and resurrected for the first time!
While in the rezzer, Mar saw God and although the memory of what exactly happened gets less and less vivid every day, she knows their prayers have been heard. The Machine tends to eventually "contaminate" those it brings back, warping their appearance to varying degrees, and after Mar woke up from their first resurrection, his eyes have taken the shape of suns.
And in practice, (some of) those prayers really might've been heard, because even though he still had to be brought back a few times, nowadays Mar almost always comes back alive from the front lines.
