Ingredients: 2 cups heavy cream. 1 cup milk. 3/4 cup sweet potato pure. 3/4 cup maple syrup. 1/2 cup chopped pecans, toasted. 1/4 tsp salt. 1/4 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp vanilla extract.
Instructions: In a large mixing bowl, combine heavy cream, milk, sweet potato pure, maple syrup, salt, cinnamon, nutmeg, and vanilla extract. Mix until well combined. Transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions. During the last few minutes of churning, add the chopped pecans and continue churning until evenly distributed. Once the ice cream reaches a soft-serve consistency, transfer it to a freezer-safe container and freeze for at least 4 hours or until firm. Serve and enjoy!
