This Instant Pot Champagne Chicken recipe has all the rich flavors of Southern food. A luxurious and comforting dish is made with soft chicken dipped in a creamy champagne sauce with a hint of spice.
Ingredients: 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces. Salt and black pepper to taste. 1 tablespoon olive oil. 1/4 cup chopped onion. 2 cloves garlic, minced. 1/2 cup champagne or sparkling wine. 1/2 cup chicken broth. 1/4 cup heavy cream. 1 tablespoon Dijon mustard. 1 tablespoon honey. 1/4 teaspoon red pepper flakes. 1 tablespoon chopped fresh parsley for garnish.
Instructions: Add salt and black pepper to the chicken pieces. Add olive oil and set the Instant Pot to "Saute" mode. Put in the garlic and onion, and cook them until they get soft. Put in the chicken pieces and cook them until all sides are browned. Add the heavy cream, honey, Dijon mustard, chicken broth, and red pepper flakes. Switch the Instant Pot to "Manual" mode and close the lid. When you're done, give it a quick release and lift the lid. Again, change the mode to "Saute" and let the sauce simmer for about 3 minutes, or until it gets a little thicker. Serve hot with chopped parsley on top.
