Soup, Sandwich, Tart Lunch Week
SO this ends up coming out to $27.55 OR $5.51 a meal! And it can be cheaper! If you did the week before this one, you would probably have ricotta left over! Plus this assumes you don't have mayo and mustard in your home for the egg salad. If you have leftover ricotta, mayo and mustard already the price drops to $20.93 or $4.19 a meal!
Sunflower Seed Soup
ΒΎβ1 cup raw sunflower seeds
1 tbsp butter
1 small onion, diced
1 carrot, sliced
1 celery stalk, sliced
Β½ apple, peeled and diced
2Β½ cups vegetable or chicken broth
ΒΌβΒ½ cup milk or cream
Salt & pepper to taste
Optional (recommended for flavor):
Β½ tsp honey or a small pinch of paprika
Instructions
Cover sunflower seeds with hot water and soak for 10β15 minutes, then drain.
Melt butter in a pot over medium heat. Add onion, carrot, apple, and celery. (Add honey or paprika here if using.) Cook 5β7 minutes until soft.
Add soaked sunflower seeds and broth. Simmer for 15 minutes.
Blend until completely smooth.
Stir in milk or cream. Season with salt and pepper to taste.
Cool and portion into 5 small containers.
As Always, Here is the non budget version and the rest of the instructions. This week I did the egg salad, the tart as a side(Though I messed up and accidentally grabbed phyllo dough instead of puff pastry), and the soup.

Creole-ish Lunch week
This meal plan comes out to $26.20 for the week. OR $5.24 per meal. I shared mine(Whole sweet potato, less rice and beans), and Mr Mouse's(Half sweet potato, full serving of rice and beans) both this week. The price is actually for his which is more food and more filling. Price CAN be cheaper over all if you Buy bigger bags of rice for more meals, use leftover celery from previous weeks, use dry beans. PLUS this is a lot of food for lunch. You could probably make a half batch of the meat and still be full.
As always here's the full plan, I skipped the grits this week just because I didn't really want to rotate options, so grits aren't included in the price.

Greek Chicken Lunch this week
While I wait for my chicken to marinate I'm gonna do a breakdown of cost. Blah blah as always, college city Walmart rices your prices may vary. I did not include the price of Oil, garlic powder, Salt or Pepper that most homes already have.
Ingredients
Chicken thighs(Bone in skin on) ~$5.93 for about 2lbs
16oz Rice - $.92
Bettergoods 32oz whole milk greek yogurt - $3.53
3 Lemons - $1.92
Red Onion - $.99
2 english cucumbers - $1.94
cherry tomatoes - $2.57
Red wine Vinegrette - 2.74
Oregano - $1.08
Dill - $2.24
Total - $23.86 for all 5 meals OR $4.78 a meal.
Instructions are in my Megara Princess Lunch Plan. I did not do the potatoes or wrap this week, just the rice bowl. And the premade salad dressing in place off making it at home for ease and budget.
Soup Sandwich and Dessert Lunch
Walmart prices. This came out to $29.37 for the five days. Or $5.87 a meal.
Obviously less if you have Mayo and Mustard at home already. I made the soup VERY Simply. I did not include the price of oil, salt or pepper.
Soup
Chicken thighs ~2lbs bone and skin on
2 Carrots, peeled and sliced
1 Celery, silced
1 Onion, diced
4 cups of water.
Add the vegetables to a pot with 1/2 tbsp of oil or butter. stir and cook until softened. Add Chicken thighs to the pot, skin side down and allow to brown. One skins have browned add water, salt and pepper. Scrape brown bits off the bottom. Simmer for at least an hour. Remove chicken thighs and slice meat off the bones. Return chicken to the soup, cool and portion for the week.
Hand Pies
In order to make as many as possible you will need to roll the dough out again. I have a hand pie press, but you don't need one.
Let the crust come to room temp. Unroll it and portion out pieces. Add 1-2tbsp depending on how big each piece you made was. Crimp edges together. Bake at 350 for 20 minutes. This is a basic break down of my Snow White lunch plan(I did not include salad cost option for this one. BUT to add a salad option for rotation, I would Swap the pound of Lunch meat for a 9oz($3.57), and add 2 apples($.80 each. $1.60) and a bottle of Balsamic($2.32) For a total of $30.92($6.19 a meal). My apples are from the half of apple Mr. Mouse didn't put on his Salad(He doesn't like soup).

Boto Fish Taco Lunch Plan
The basic version came to just $13.87 for five lunches using fish, rice, black beans, and a simple fresh salsa. The fully loaded cart was about $21, but that included rice and tortillas, extra produce, avocado, and fresh cilantro.
Choose only rice or tortillas, skip the optional toppings, or use pantry staples you already have, and it stays very comfortably under $20.
