Ingredients: 200g fresh salmon fillet, thinly sliced. 1 small fennel bulb, thinly sliced. 1 ripe pear, thinly sliced. 1 lemon, juiced. 2 tablespoons extra virgin olive oil. Salt and pepper to taste. 1 tablespoon honey. 1 teaspoon Dijon mustard. Fresh dill for garnish.
Instructions: Arrange the thinly sliced salmon on a serving platter. In a bowl, mix fennel slices with lemon juice, olive oil, salt, and pepper. Set aside for 10 minutes. Divide the fennel mixture into two portions. Keep one portion as is for a fresh salad. To the other portion, add thinly sliced pear, honey, Dijon mustard, and toss gently.
