A delicious and nourishing soup with bright flavors of kale, lemon, and white beans. Ideal for a hearty dinner.
Ingredients: 1 cup dried white beans, soaked overnight. 1 bunch kale, stems removed and leaves chopped. 1 onion, finely chopped. 3 cloves garlic, minced. 1 lemon, juiced. 6 cups vegetable broth. 2 tablespoons olive oil. 1 teaspoon dried thyme. Salt and pepper to taste.
Instructions: In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, saut until softened. Add soaked white beans, kale, thyme, salt, and pepper. Cook for 5 minutes. Pour in vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 45-60 minutes or until beans are tender. Stir in lemon juice just before serving. Adjust seasoning if needed. Serve hot and enjoy!
