Ingredients: 2 cups leftover ham, diced. 1 cup dried navy beans, soaked overnight. 1 onion, chopped. 1 bell pepper, chopped. 2 celery stalks, chopped. 3 cloves garlic, minced. 1 can 14 oz diced tomatoes. 6 cups chicken broth. 2 teaspoons Cajun seasoning. 1 teaspoon dried thyme. 1/2 teaspoon paprika. 1/2 teaspoon cayenne pepper. Salt and black pepper to taste. 2 tablespoons olive oil.
Instructions: In a large pot, heat olive oil over medium heat. Add chopped onion, bell pepper, celery, and garlic. Saut until vegetables are softened. Stir in diced ham and cook for an additional 2-3 minutes. Add soaked navy beans, diced tomatoes, chicken broth, Cajun seasoning, dried thyme, paprika, cayenne pepper, salt, and black pepper.
