Since I'm trying to NOT eat everything in the pan at one go I had some left-over risotto. And thus the perfect material for trying out an idea: how can I make those fried risotto balls?
Turns out: nothing could be easier. As I said I had some risotto left over from diner and it had been sitting in the fridge for 2 days. It was cold and sticky, perfect structure for frying. I just beat an egg and tossed some breadcrumbs in a bowl, heat up some sunflower oil and go!
I waited about 10 minutes or untill the crust was brown and crispy. Put them on some paper towels to drain the excess fat and serve!
One point that could be improved. I had made a risotto with peas, courgette and goats cheese. Some of the courgette pieces and pieces made it difficult to form nice balls so I suggest to use
just risotto and cheese or finely chop your veggies if you just can't live without. They didn't even need a dip or sauce! add a simple salad and some loose veggies and you're good to go!
