The latest video I used Reflector to record the iPad’s screen and then edited it to be faster, include music, titles, etc.
As long as you have an iPad 2 or newer you can use Reflector. Basically you turn on AirPlay mirroring on the iPad and it lets you beam it over to your Mac or PC that is running Reflector. Reflector has a free trial that limits you to 10 minutes I think, but that should be good enough to test out before buying.
I’ve also done videos where I take a screenshot every few seconds/minutes and then turned them into a slideshow that I speed up. My earlier time lapse videos were all done that way. It’s not as cool looking because you don’t see the actual strokes happen, but it’s still kind of neat.
A few weeks ago I setup my digital camera to take a photo every 5 seconds of me drawing, and then I turned that into a video. Takes a lot of work to setup, but it has the benefit of being able to see your hands and stylus actually draw on the iPad.

Part 2 will be the meatier chunk walking through techniques to draw/paint landscapes, skies, water, skin, hair, and lighting effects.
Part 3 will explore palette organization, copying and moving pages around as a way to version control your work, making Paper time lapse videos, and how to get your work in the Made With Paper gallery.

Trying a new process for capturing time lapse PaperFaces speed drawings. Instead of recording a mirrored imaged of the iPad on my iMac and speeding it up in AfterEffects... I setup my dSLR on a tripod, tethered it to the iMac, and had it snap a photograph every 5 seconds. Which I then brought into AfterEffects as an image sequence to export as a video.
Not too happy with the lighting or the focus in a few spots, but I think it's cool that I was able to show how I actually draw and use reference images.

You can basically use all the tools to make a running paint effect. I haven’t had much experience with it in real life, so I based these on pictures from google.
The easiest is just to draw it in with either of the pens, the marker or pencil, depending on what kind of look you want. If you’re drawing big, you can just use the watercolor brush.
Experiment. Learn how the different tools behave and what you can do with them. If you have a specific effect in mind, just try until you find something that works. I had no idea how to do this until you asked.
