Creamy pineapple smoothie swirled with strawberry, frozen into delicious popsicles. These Lava Flow Popsicles are a refreshing treat for hot summer days.
Ingredients: 2 cups pineapple chunks, frozen. 1 cup coconut milk. 2 tablespoons honey or maple syrup. 1 teaspoon vanilla extract. 1 cup strawberries, chopped. 2 tablespoons water.
Instructions: Coconut milk, honey or maple syrup, frozen pineapple chunks, and vanilla extract should all be mixed together in a blender. Mix until it's creamy and smooth. Fill up each popsicle mold about halfway with half of the pineapple mixture. Using a blender, blend the water and chopped strawberries together until the mixture is smooth. Fill the popsicle molds all the way to the top with the strawberry mixture. Now pour the pineapple mixture on top of it. To make a marbled look, gently swirl the two mixtures together in each mold with a popsicle stick or knife. Put the sticks into the molds and freeze them for at least 4 hours, or until they are completely solid. To get the popsicles out of the molds, run warm water around the outside of them for a few seconds and then carefully pull the popsicles out. Serve right away and enjoy the fruity, creamy goodness!
