Ingredients
1 green plantain
1 ripe banana (optional)
1 (12 oz.) can evaporated milk
1 can coconut milk
1/4 tsp vanilla extract
3 cinnamon sticks
2 whole anise stars
1 tbsp butter
Pinch of grated nutmeg
2 pinches of salt
1/2 cup sugar
1/2 inch whole lemon or lime rind
Directions
Prepare the Plantain: Peel and cut the green plantain into small chunks. Blend with 1–2 cups of water until smooth. (If using, add the ripe banana for extra creaminess.)
Cook the Base: In a saucepan, combine blended plantain mixture with coconut milk and evaporated milk. Stir well.
Add Flavor: Drop in cinnamon sticks, anise stars, nutmeg, butter, lemon or lime rind, and salt. Simmer on low heat, stirring often.
Sweeten & Serve: Add sugar to taste and continue cooking until thick and creamy. Remove whole spices before serving.
Serve warm for a delicious, hearty dish that highlights the heart of Haitian cuisine.
