I bought a lot of dried fruit and there's no way we can just nibble it all, so I decided to use some of it for compote. We love compote and I make it a different way each time, depending on what fruit I have.
This is the latest version. It's absolutely terrific with yogurt for breakfast!

You can leave out the cardamom pods; I just happened to have some):
DRIED FRUIT COMPOTE
8 dried figs
6 Medjool dates (pit removed)
1 cup dried apricots
1 cup cut up dried papaya
1 cup cut up dried mango
1/2 cup dried strawberries
1/2 cup crystallized ginger
8 whole cloves
1 cinnamon stick, broken in half
8 cardamom pods
Mango juice
Place the figs, dates, apricots, papaya, mango, strawberries and ginger in a large saucepan. Sprinkle the cloves, cinnamon stick and cardamom pods over the fruit. Pour in 3-4 cups mango juice - enough to cover the fruit. Bring to a boil over high heat. Turn the heat to medium-low and simmer for about 40-45 minutes or until the fruit is soft. Add more juice if the sauce seems too thick. Let the fruit cool in the pan. Serve the fruit with the poaching liquid.
