Bowser feels like a very two-sided person (turtle?) to me. On one hand, he's extremely temperamental, larger than life, violent, forceful, etc. And yet, also gentle, paternal, loving, affectionate. Even if you're very dear to him, his bad traits do come out, even if he tries to soothe his short temper for your sake.
His attempts to court you (albeit, Koopa courtship periods are typically on the shorter side) range from typical all-powerful ruler stuff (sending you extravagant gifts, invading wherever you happen to live), traditional Koopa practices (consensual bride-napping) and your own human traditions.
See, he does care! He's fully dressed at your wedding. How considerate of your strange, human customs.
He really does try to come off as the greatest partner ever when you're around. Simultaneously, attempting to present himself as the perfect gentleman and an ass-kicking conqueror; universally loved and feared.
Why Bowser is attracted to you is another area of discussion. Maybe, like Peach, you're the ruler of some quaint little Kingdom just waiting to be conquered - a royal marriage would only seal the deal. Maybe you're a friend of the Mario brothers who caught his eye, stuck between loathing you and wanting you all for himself (kinda like his relationship with Peach in the Super Mario Brothers Super Show).
He doesn't even have a thing for humans specifically, though I do think he has a preference for sweeter, feminine personalities, seeing as that's the one thing Clawdia and Peach have in common.
Part of his motivation for courting you revolves around finally giving the Koopalings (mainly Bowser JR but shhh...) a step-parent. If or if not the majority of them like you isn't relevant, but I wouldn't be surprised if Junior (much like this father) became very clingy and protective of you.
Bowser can be very mushy and sweet if you play your cards right. This goes double if you're good to the Koopalings and him right off the bat. He will write songs about you and you will find them charming (e.g. Peaches from The Super Mario Bros. Movie).
Not gonna go into huge detail here, but as you're likely smaller than him (Bowser is big, even by Koopa standards) Bowser takes great pleasure in being very physically affectionate with you. He likes to hold you in one claw, have you sit on him, hold you down during *adhem* mating. He's a big kisser, too.
