Our best method to cut kernels off the cob
We've all been there: You’re ready to make a summer relish, salad or chowder with some fresh sweet corn from the farmer’s market and as you slice down, the kernels go flying everywhere. That’s because it’s nearly impossible to cut corn in a neat and orderly manner while the corn is being held up, which is usually a cook’s first instinct. Even for cooks with above-average knife skills, holding a corn cob perpendicular to a table while slicing can be scary.
As Chef Justine demonstrates here, there’s a fast, easy and safer way to cut those kernels off. Simply lay the corn cob flat on a cutting board and slice the kernels off holding the knife horizontally, then rotate the cob and repeat. Cut and rotate the corn until all the kernels are removed onto the cutting board and presto -- corn off the cob.
