It’s this time of the year again!
This is a swiss kingscake and it got a little king’s figure hidden in one of those small little buns.
Everyone takes a bun and the person who got the king in their bun, gets the crown placed in their head and can command the other people for one day (we don’t take it serious though. We love to joke around with that)

Raspberry Rose Galette des Rois complete with handmade crown. I wonder who will be the lucky one to get the fève and be king for a day? This is made entirely from scratch down to the inside out puff pastry using Pierre Hermé's recipe. The galette I adapted from @davidlebovitz. I made mine only 20cm diameter. The crème d'amandes filling I flavored with 30g freeze dried raspberries, 1 teaspoon rose extract, and 2 tsp framboise.
