Fluffy Fresh
I once heard a young brewer claim Kölsch was his favorite beer style. At the time I thought he must be nuts. Kölsch is tasty and all, but it all tastes the same right? But the kid had a point. Kölsch is a hard style to get perfect. It’s subtle. Lots of people will brew up a blonde ale and call it a Kolsch to make it sound fancy. That’s not what it is.
If you want to know how to make a Kölsch, go ask Bolt Minister. The guy made a really great Kölsch when he worked at Old Town Brewing, which was even better during fresh hop season. Now he’s opened his own place 54º 40` Brewing with another great Kölsch.
Käscadia just demands to be gulped. The body is so soft and the foam is so creamy. It gives off the scent of freshness. It smells green. It smells like Heineken, but in a good way. I can’t explain it. And it tastes like beer. Oh! Does it taste like beer. It’s clean and refreshing with tiny hints at lemon and wonder bread and the lightest bitterness. It’s just so perfect.
