Ingredients: 12 oz rigatoni pasta. 2 tablespoons olive oil. 4 shallots, thinly sliced. 3 cloves garlic, minced. 1 bunch kale, stems removed and leaves chopped. 1 lemon, zest and juice. 1/4 cup grated Parmesan cheese. Salt and pepper to taste. Crushed red pepper flakes optional.
Instructions: Cook rigatoni according to package instructions until al dente. Drain and set aside. In a large skillet, heat olive oil over medium heat. Add shallots and garlic, saut until softened and fragrant, about 3 minutes. Add chopped kale to the skillet, cook until wilted, about 5 minutes. Stir in cooked rigatoni, lemon zest, and lemon juice. Toss to combine. Remove from heat and sprinkle with grated Parmesan cheese. Season with salt, pepper, and crushed red pepper flakes if desired. Toss again to incorporate. Serve hot, garnished with additional Parmesan cheese and lemon zest if desired.
