This June Jam is the perfect way to capture the vibrant flavors of summer. It's bursting with the sweetness of fresh berries and a hint of tangy lemon. Make a batch to savor the taste of June all year long!
Ingredients: 4 cups of fresh berries strawberries, raspberries, or blueberries. 1 1/2 cups granulated sugar. 2 tablespoons lemon juice. 1 teaspoon pectin optional for thicker consistency.
Instructions: After cleaning and seeding the berries, mash them in a big bowl. Put the mashed berries, sugar, and lemon juice in a different saucepan. Stirring constantly, cook the mixture over medium-high heat until it comes to a rolling boil. To achieve a more viscous consistency, thoroughly mix in the pectin. After lowering the heat to low, simmer the jam for 15 to 20 minutes, or until it thickens. Take it off the stove and give it some time to cool. Pour the jam into the sterilized jars, making sure to leave a small opening at the top. To preserve the jars, close them and process them for ten minutes in a hot water bath. When storing the jars in a cool, dark location, let them cool to room temperature. Savor your homemade June jam with pancakes, toast, or as a garnish for sweets!
