is this a sandwich? my annoying pedantic brain said no, but my mouth said yeah, close enough.
i sliced and fried my plantains, then took them out of the oil and flattened them, and then fried them again. i made a bunch of little sliders, essentially. green plantains are very firm and starchy, so they made an excellent structure for the rest of my toppings.
anyways, after i had my tostones base, i added fried chicken, lettuce, tomato, and some homemade garlic aoli. i ended up cutting them down to be slider-sized to better fit my tostones and chicken pieces.
and they were really nice! the tostones made it a wholy unique but delightful experience, and i really enjoyed learning how to make them. it was firm and starchy, the slightest hint of sweetness, and held together far better than i anticipated. the pairing with the spicy chicken and garlic sauce definitely highlighted the savory tones of this sandwich. i would love to eat it at a restaurant sometime, just to get an experts' take instead of me reading off a recipe on google.
