Great article on culturing yeast from fruit, I’d dearly love to do some culturing of yeasts here whilst on holiday in South Korea but I fear sadly it wouldn’t be possible to bring them back.
I have seen some amazing oranges on Jeju island, something it’s famous for (I have some dried ones to use potentially in a Saison) they would be epic for this, the perfume from their skin alone is sensational. Oh well till I return!
