Micro Mini hot cocoa cake for one/two!
I'm so excited to write this recipe , we haven’t even had the cake yet and I want to tell u all about it! Nahhh don’t worry! I’m sure it tastes good. So, my husband and I have been on this watching what you eat regimen, a.k.a how most people normally live. We both had kinda let go after the wedding. So for the last three months, we have just been more conscious of what we eat, and been going to the gym regularly. Husband is more regular and disciplined than me. He even recently did the the half dome hike, which is a big deal for other wise not so fit people.
Coming to the cake, he got a promotion today! Yes! We are 26% less poor :-). So considering how ‘chamathu’ (goody goody) we ve been in the past few weeks, I wanted to make some dessert that won’t keep sitting in my fridge and guilt tripping me intro eating it, just cos it’s going waste. So I remembered this coffee mug cake that my BIL once made for us. But I don’t have any cocoa powder at home. I don’t know why, I never do. But voila!I had some hot chocolate mix that I had bought a while back! So, here goes my super awesome hot cocoa microwave cake - a.k.a The true Micro-Mini cake for one! P.S:- I devoured the cake and struggled to let my husband have some.
Ingredients
Hot cocoa packet - 1
All purpose flour - 3 tbspn
Butter or substitute - 2 tspn
Baking powder - just a sprinkle
1 egg
A microwave safe mug or ramekin
Some nonstick spray
How to
1· Spray the mug with some PAM
2. If you truly are lazy, you can do the mixing in this mug/ramekin itself. But my ramekin was shallow..So I mixed the ingredients in a bowl separately
3. Mix all the ingredients until you get the consistency of a cake batter. If too thick, add some milk and thin it down.
4. Fill the container only half way through. The cake will rise in the microwave, so it needs some room to do that.
5. Place the ramekin/mug in the microwave for about a minute. Mine took 1:30 minutes.
6. Do not panic and open the door if the batter rises. It’s supposed to do that, remember? Place a plate or a paper towel under the ramekin to catch the spillover.
7 Remove from the microwave, carefully. Its going to be hot. Let it cool and serve with whipped cream and berries or vanilla icecream.
