This Cleansing Vegetable Turmeric Soup is packed with nutritious ingredients and warming spices, making it a perfect choice for a healthy and comforting meal. Turmeric adds anti-inflammatory properties while vegetables provide essential vitamins and minerals.
Ingredients: 1 tbsp olive oil. 1 onion, diced. 3 cloves garlic, minced. 1 inch fresh ginger, minced. 2 carrots, diced. 2 celery stalks, diced. 1 large sweet potato, peeled and diced. 1 small head cauliflower, chopped. 4 cups vegetable broth. 1 can 14 oz coconut milk. 1 tbsp ground turmeric. 1 tsp ground cumin. Salt and pepper, to taste. Fresh cilantro, for garnish.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Put in the ginger, onion, and garlic. Saut until the food smells good. Add the celery, carrots, sweet potato, and cauliflower and mix them in. Bring it to a boil. Add the coconut milk and vegetable broth. Spice it up with cumin, salt, and pepper. Mix well. Turn the heat down to low and cook for 20 to 25 minutes, until the vegetables are soft. Blend the soup until it's smooth with an immersion blender. You could also use a blender and blend in batches until smooth. Check the seasoning and make changes if needed. Serve hot with fresh cilantro on top. Have fun!
