This Paleo-friendly shrimp avocado salad is bursting with fresh flavors and nutrients. It's the perfect dish for a light lunch or dinner, packed with protein, healthy fats, and vibrant vegetables.
Ingredients: 1 lb shrimp, peeled and deveined. 2 avocados, diced. 1 cup cherry tomatoes, halved. 1/4 cup red onion, finely chopped. 2 tablespoons fresh cilantro, chopped. 2 tablespoons olive oil. 2 tablespoons lime juice. 1 garlic clove, minced. Salt and pepper to taste. Mixed greens for serving.
Instructions: Shrimp, diced avocado, cherry tomatoes, red onion, and cilantro should all be combined in a big bowl. To make the dressing, combine the olive oil, lime juice, minced garlic, salt, and pepper in a small bowl. Over the shrimp and avocado mixture, drizzle the dressing. To coat, gently toss.
