The change to make Daniel Molloy and old man and Armand to have been turend at around 27 is actually so brilliant from an adaptation perspective, like
In the books Armand forever looking like a cherubi 17 year old is quite jarring. Add to that the fact Book Daniel is like 20yo in iwtv and their relationship is around 12 years , so when he is turned by Armand he's about 31 yo.
So if you wanted to portray that with actors, well.... I mean it's probably doable, but there's a certain specific kind of discomfort that comes with the younger actor (even if they wouldn't be that young) portraying all that comes with devil's minion and Armand's story on screen.
(Mind you, I know that in the history of cinema actors as young as 20 have been in scenes more extreme that what we saw in 2x05 of iwtv. Doesn't mean this should be something that is chosen to be done if there is another option for the character's age)
And this is why I think walking away from that (and the can of worms it could have been for the production) and making the actors age gap still jarring but less of a problem is so briliant.
You still get to imagine the raised eyebrows of in-universe people who don't know Armand is a 514 year old vampire when seeing Armand and Daniel together. You still get to think "lol they are all probably outraged at the age gap", but without the "ymm... should we also be concerned about the age gap?".
