Brunch au Palais avec vue… Le Palais de la Méditerranée, joyau de l’Art déco de la Promenade des Anglais, mondialement connu pour son histoire sulfureuse et mystérieuse, a été entièrement réhabilité en 2001, dont une partie en hôtel, après un sauvetage in extremis de la destruction. Il est Géré et exploité depuis 2004 par le Groupe Hyatt Hôtels, sous le pavillon Hyatt Regency et devient @hyattregencypalaismed. C’est le chef exécutif @cyrilcheype, au parcours prestigieux argentin et parisien (La Bourgogne au Palace Avlear, et Palace Duhau Park Hyatt à Buenos-Aires, Sous-Chef Exécutif Park Hyatt Paris-Vendôme...), qui orchestre les cuisine de l’hôtel. Il propose au restaurant Le 3ème, une carte sincère à base de produits locaux de saisons. Les Fromages de chèvre sont de l’arrière-pays et s’aromatisent d’huile des oliviers ou du Miel des ruches des Gorges de Daluis.
