Homemade Victoria Sponge • Really simple and quick to make. • Cake ingredients - 225 grams self raising flour, 225 grams butter, 225 grams sugar, two teaspoons of baking powder and 4 medium sized eggs. • Filling - 225 grams strawberry jam, 600ml double cream and 4 teaspoons of caster sugar • How to make it - Heat oven to 180 degrees - Mix sugar and eggs in a bowl until smooth - add butter and mix until smooth - slowly add flower and baking powder - mix until mixture is again smooth. • Grease two round baking tins and divide the mixture between them • Cook for at least 28 mins without opening the oven door (opening the door will stop the cake rising) • At the 30 min mark slide a knife into the cakes and ensure it’s cooked through, the edges should just be coming away from the tin and top golden brown. • Remove from over, turn out on to wire racks and leave to cool • Once cooled, choose one of the cake halves as the base and coat in the strawberry jam • Then combined the cream and caster sugar and whisk until the mixture goes thick, put the cream on top of the jam spreading evenly • Add the second have of the cake and sprinkle a small amount of caster sugar in the top as a final flourish • #sarahhowen #cakemaker #howardforster #ableassistant #cake #victoriasponge #homemadecakes https://www.instagram.com/p/B7f_BH8p6Ia/?igshid=1greac0yhgnmu
