My favorite meal of all time....My Lemon Chicken Ingredients: 2 pkgs boneless chicken cutlets (thin cut) 2 eggs 3 C Italian bread crumbs 2C vegetable oil 1C milk 5 lemons sliced Recipe: -Blend milk and egg in bowl -Drench each cutlet in egg mixture then dredge each side in bread crumbs until fully covered on both sides -Drop chicken in large frying pan of heated oil and brown on each side until golden -Layer cutlets in aluminum pan -Place 2 lemon slice on each piece of chicken in pan (be sure to remove seeds) -Cover pan with aluminum foil to steam the lemons -Bake in preheated oven at 350degrees for 45 mins The heat from the oven will cause the lemon slices to release the juice all over the chicken. This will marinate the cutlets causing an amazing burst of flavor and keep the chicken moist and succulent! Serve chicken with the lemons on top.
