A Recipe of Sticky Mango Prawns
Pull the legs and tails off the prawns as quickly as possible, then peel off the shells, leaving the heads on for added flavour. Pull the vein out of their backs using the tip of your knife. Preheat a medium-sized nonstick frying pan.
Peel and coarsely slice the garlic, then cook it in 1 tablespoon of olive oil until crisp. Scoop off the garlicky oil and set it aside.
Add the prawns after stirring the curry powder into the oil. Fry for 4 minutes, stirring frequently, or until the prawns are cooked through.
Stir in the mango chutney for 30 seconds, taste, and season with sea salt and black pepper to taste before serving. Sprinkle the fried garlic on top and finely shred it. You need home-made chutney in this dish to enhance the flavour of your food.
