Grilled Spiedies are a classic Upstate New York dish featuring marinated and grilled meat skewers, typically served in a sub roll. This recipe uses a flavorful herb-infused marinade to elevate the taste of succulent chicken spiedies.
Ingredients: 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes. 1 cup olive oil. 1/2 cup white vinegar. 4 cloves garlic, minced. 2 teaspoons dried oregano. 2 teaspoons dried basil. 1 teaspoon dried thyme. Salt and black pepper to taste. 4-6 sub rolls for serving. Optional: Sliced red onions, cherry tomatoes, and lettuce for garnish.
Instructions: To make the marinade, mix olive oil, white vinegar, oregano, basil, thyme, salt, and black pepper in a bowl with a whisk. Put the chicken cubes in a plastic bag that can be closed again and again. Then, pour half of the marinade over the chicken. Put the bag in the fridge for at least two hours, or better yet, overnight. Warm up the grill over medium-high heat. Put the chicken cubes that have been marinated on skewers. If you want the spiedies to be fully cooked and a little charred, grill them for 10 to 15 minutes, turning them over every so often. Brush the spiedies with the rest of the marinade while they're on the grill to make them taste even better. For one or two minutes, warm the sub rolls up on the grill. Take the spiedies off the skewers and put them in the sub rolls that have been warmed up. If you want, you can add sliced red onions, cherry tomatoes, and lettuce as a garnish. Enjoy while hot!
