My love and I just completed a year of veganism! I can’t speak for him but I feel fantastic. I feel lighter and more eager to eat new things-I haven’t tried so many foods in my entire life like I have this past year. Here are few of my favorite vegan dishes I made at home! -Chick’n noodle soup using Gardein strips, carrots, celery, onions, and rice noodles. -Tacos using Gardein beefless crumbles, refried beans, tofutti sour cream, and taco sauce. -Sandwhich w. Tofurkey hickory slices, Follow Your Heart provolone cheese, Hellman‘ vegan mayo, hot pickles, tomato, spinach, mustard, and avocado. (Can’t take credit for this one. He made this beauty) -everything bagel with pretty much everything the Sammy had except the tomato and pickle. - Gardein bbq Chick’n sandwich w cornbread muffins( I used the vegetarian boxed kind with a flax egg and plain unsweetened almond milk) and cheesy broccoli and rice I made from scratch using daiya cheese.
