This is a hearty and tasty soup that has the richness of cheese and the salty goodness of ham and potatoes. Great for getting rid of leftover ham!
Ingredients: 1 cup diced ham. 2 cups potatoes, peeled and diced. 1/2 cup onion, finely chopped. 3 cloves garlic, minced. 4 cups chicken broth. 1 cup milk. 1/2 cup heavy cream. 2 cups shredded cheddar cheese. Salt and pepper to taste. Chopped chives for garnish.
Instructions: In a large pot, saut onions and garlic until translucent. Add diced ham and cook until lightly browned. Stir in potatoes and chicken broth, bring to a boil, then reduce heat and simmer until potatoes are tender. Add milk, heavy cream, and shredded cheddar cheese. Stir until cheese is melted and the soup is creamy. Season with salt and pepper to taste. Simmer for an additional 10 minutes, allowing flavors to meld. Serve hot, garnished with chopped chives.
