Ingredients: 2 cups grated potatoes. 1/4 cup finely chopped onion. 1/4 cup grated Parmesan cheese. 1/4 cup all-purpose flour. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 2 large eggs. 4 poached eggs. Fresh chives for garnish.
Instructions: Follow the directions that came with your waffle iron to get it hot. Grate potatoes, chop onion, add Parmesan cheese, flour, salt, and black pepper to a large bowl. Combine well. Beat two big eggs and add them to the potatoes. Stir everything together until it's well mixed. Use non-stick cooking spray or a brush with some oil to clean the waffle iron. Put some of the potato mixture on a waffle iron that has already been heated and spread it out evenly. It will take about 10 to 12 minutes of cooking after you close the waffle iron until the waffle is golden brown and crispy. While the waffle is cooking, use your favorite method to poach 4 eggs. Take the hash brown waffle out of the iron carefully and put it on a plate to serve. On top of the hash brown waffle, put poached eggs and fresh chives. Add salt and pepper to taste.
