Their monster forms is different from guest to guest. Some only gain more animal features, others are more like a werewolf transformation.
A guest without a monster form would still have animal features, a lot less than normal, but still will have some.

Yes, it is still canon. Some guests have more animal features than others, but they always have some sense or instinct from the animal their monater form takes.
For example, Guest 666 really likes honey and has the urge to hibernate, even though they can't really do that, because her form is a bear.

Not really
The most I can think of is that the numbers is the closest thing their names sound like in guestspeak. Instead of having to write thirteen thirty-seven, they use the numbers.
It also may be something that stuck from a previous persecution. The traditional names changed to be numbers as a way to remember that they came out stronger. Or maybe it stuck because that's how the first specimens from BM were numerized. They kept the numberomg system because that is how their culture started.
