Best Ever Guac Recipe
I’m a huge fan of avocado anything. Having said it’s no doubt that I love guacamole. This is the best ever guac recipe. As found in one of my favorite cookbooks ever ‘Plant Over Processed’ by Andrea Hanneman. If you love guac too, give it a try.
HOLY MOLY GUACAMOLE
2 Medium Ripe Avocados, halved 1/2 Cup Finely Chopped White Onion 1/4 Cup Finely Chopped Fresh Cilantro 1 Small Jalapeño Chile, seeds and ribs removed, finely chopped (optional) 1 tablespoon Lime Juice, plus more to taste 1/4 teaspoon ground coriander 1/4 teaspoon sea salt, plus more to taste
Directions
1. Scoop out fleas of avocado and mash in bowl to desired texture.
2. Add onion, cilantro, jalapeño, 1 tablespoon of lime juice, coriander, and 1/2 tsp of salt and mix until combined. Add more lime juice and salt to taste if needed. Guac will taste better after letting set a few min.
3. Enjoy!
**To save guac from turning brown save pit and place in the middle of the bowl. Drizzle with extra lime or lemon juice before storing with an airtight lid. Will last two days in fridge.

Fajita seasoned tofu and mushrooms, spicy tomato rice, zesty guacamole, lettuce, jalapeños and vegan cheese shreds.
RECIPE:
Extra firm tofu, baby bella mushrooms, fajita seasoning, garlic powder, cumin, black pepper, cayenne. Get some of the moisture out of your tofu, chop it and and the mushrooms and season in a bowl and mix together. Lightly oil and pan and cook to your liking.
Rice, taco seasoning, onion powder, paprika, tomato sauce, onions and red pepper flakes. Cook rice and season, add some onion and tomato sauce to finish.
