A rich bourbon brown butter sauce goes on top of juicy grilled peaches. This simple but classy dessert is great for summer get-togethers.
Ingredients: 4 ripe peaches, halved and pitted. 2 tablespoons vegan butter. 2 tablespoons brown sugar. 2 tablespoons bourbon. 1/2 teaspoon vanilla extract. Pinch of salt. Vegan vanilla ice cream, for serving optional.
Instructions: Preheat grill to medium-high heat. In a small saucepan, melt the vegan butter over medium heat. Stir in the brown sugar and cook until dissolved, about 1-2 minutes. Add the bourbon, vanilla extract, and salt. Cook for another 1-2 minutes, stirring constantly, until the sauce is smooth and slightly thickened. Remove from heat and set aside. Place the peach halves cut side down on the grill. Grill for 2-3 minutes, until grill marks appear. Flip the peaches and grill for an additional 2-3 minutes, until softened. Remove the peaches from the grill and place them cut side up on a serving platter. Drizzle the bourbon brown butter sauce over the grilled peaches. Serve warm, with vegan vanilla ice cream if desired.

The chocolate and marshmallows melt and the bananas caramelize under the heat of the grill, making for a rich and satisfying dessert. Ideal for anytime you're craving something sweet and decadent, like on a summer's evening.
Ingredients: 4 ripe bananas. 8 graham cracker squares. 8 marshmallows. 4 ounces of chocolate chips. 4 tablespoons of butter.
Instructions: Set the temperature of your grill to medium-high, or roughly 350F/175C. After peeling, cut the bananas in half lengthwise. Arrange each half of a banana on a piece of foil. Place two tablespoons of chocolate chips and two marshmallows on top of each half of a banana. Place one tablespoon of butter on top of every stack of bananas. To create sealed packets, fold the aluminum foil around the banana stacks. After positioning the foil packets on the grill grates, shut the lid. Cook for five to seven minutes, or until the bananas are soft and the marshmallows have melted. Split the graham cracker squares in half to make sixteen separate squares while the banana packets are grilling. After that, carefully open the banana packets, being careful around hot steam, and stack a banana on top of four squares of graham cracker. To make a sandwich, place another square of graham crackers on top of each. Enjoy your delicious grilled banana s'mores immediately after serving!

Ingredients: 2 ripe nectarines, halved and pitted. 1 cup blackberries. 8 ounces halloumi cheese, sliced. 6 cups mixed salad greens. 1/4 cup balsamic vinaigrette dressing. 1/4 cup chopped fresh mint. 1/4 cup chopped fresh basil. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Warm up the grill over medium-high heat. Add salt and pepper to the halloumi slices and nectarine halves after brushing them with olive oil. Put the halloumi slices and nectarines on the grill. Cook for two to three minutes on each side, until they get grill marks and become a little soft. Take the halloumi and nectarines off the grill and let them cool down a bit. Put the mixed greens, blackberries, chopped mint, and chopped basil in a large salad bowl. Cut the grilled nectarine into thin wedges and put them in the salad. Also, add the grilled halloumi slices to the salad. Pour the balsamic vinaigrette dressing over the salad, and then gently toss everything together. Serve the salad right away, and if you want, top it with extra basil and mint. Have fun with your grilled orange, blackberry, and halloumi salad!

Instructions: Warm up the grill over medium-high heat. To make the glaze, mix honey, lime juice, and vanilla extract in a small bowl. Using different kinds of fruit to make a colorful mix, thread them onto the wet skewers. Use a brush to cover all of the fruit on the skewers with the honey-lime glaze. Place the skewers on a hot grill and cook for 5 to 7 minutes, turning them over every now and then, until the fruit has grill marks and starts to caramelize a bit.
