So say hypothetically I have a Standstill out and then cast a Brainstorm or something. Am I able to wait for the sacrifice part of the trigger to resolve, then flash in a notion thief to draw the three cards instead of my opponent? Or am I misunderstanding how punctuation works with abilities.
Players can never cast spells or activate abilities in the middle of another spell or ability resolving unless specifically instructed to do so. You can’t cast Notion Thief in the middle of Standstill’s triggers resolution.
What's the likelyhood of a hybrid Mana costed walker? Does that work flavorfully or are most walkers too committed to their color alignment?
A hybrid planeswalker is not off limits, but is a very tricky design.

How do double faced cards work with devotion? I tried googling it but all the answers I got were from like 2013 and I know rulings about the Mana costs of DFCs have changed since then
The back face of a double-faced card has no mana cost. While it now has a converted mana cost equal to the converted mana cost of its front face, it still doesn’t have an actual mana cost and can’t provide any devotion.

Does fighting have to be a creature I control vs another creature? Would it be possible to have a card that allows two creatures I don't control to fight each other? Or does that break some rule you gave fighting? It could make for a near alternative to threaten effects in red
