Indulge in the perfect blend of honey-roasted peaches, creamy Greek yogurt, and crunchy granola. This delightful parfait is a sweet treat inspired by The Londoner's signature style.
Ingredients: 4 ripe peaches, halved and pitted. 3 tablespoons honey. 1 tablespoon olive oil. 1 cup Greek yogurt. 1/2 cup granola. 1/4 cup chopped nuts e.g., almonds or walnuts. Fresh mint leaves for garnish.
Instructions: Preheat the oven to 400F 200C. In a small bowl, mix honey and olive oil to create a glaze. Place peach halves on a baking sheet, cut side up. Brush the peach halves with the honey and olive oil glaze. Roast in the oven for 15-20 minutes or until peaches are caramelized and tender. Remove from the oven and let them cool slightly. In serving glasses or bowls, layer Greek yogurt, granola, and roasted peach halves. Repeat the layers until the glasses are filled, finishing with a dollop of Greek yogurt on top. Sprinkle chopped nuts over the parfait. Garnish with fresh mint leaves. Serve immediately and enjoy!
