Granita is a cool Italian dessert that is simple to make and can be changed in a lot of ways. You can use your favorite fruit juice or puree in this recipe to make six different flavors of granita.
Ingredients: 1 cup fruit juice or puree such as strawberry, mango, lemon, etc.. 1/4 cup granulated sugar adjust to taste. Optional: fresh fruit chunks, mint leaves, or citrus zest for garnish.
Instructions: In a saucepan, combine the fruit juice or puree with granulated sugar. Heat the mixture over medium heat, stirring constantly until the sugar is completely dissolved. Remove from heat and let the mixture cool to room temperature. Pour the mixture into a shallow baking dish or pan and place it in the freezer. After about 30 minutes, use a fork to scrape the frozen edges and stir the mixture. Repeat this process every 30 minutes until the entire mixture is frozen and has a granular texture, about 2-3 hours total. Serve the granita in chilled glasses or bowls, garnished with fresh fruit chunks, mint leaves, or citrus zest if desired.
