Ingredients: 1 cup mashed ripe bananas. 1/4 cup honey. 1/4 cup unsweetened applesauce. 1 egg. 1 teaspoon vanilla extract. 1 cup whole wheat flour. 1/2 cup oats. 1/2 teaspoon baking soda. 1/2 teaspoon baking powder. 1/2 teaspoon cinnamon. 1/4 teaspoon salt. 1/2 cup dried cranberries.
Instructions: Warm up your oven to 350F 175C and cover or spray a mini muffin tin with nonstick cooking paper. Put the mashed bananas, honey, applesauce, egg, and vanilla extract in a bowl. Combine well. Add the oats, baking soda, baking powder, cinnamon, and salt to a different bowl and mix them together using a whisk. Mix the dry and wet ingredients together until they are just mixed. It's time to add the dried cranberries. Fill up each mini muffin tin cup about two thirds of the way to the top with muffin batter. After the oven is hot, bake the muffins for 12 to 15 minutes, or until a toothpick stuck in the middle comes out clean. First, let the muffins cool in the pan for a few minutes.
