Ingredients: 1 cup all-purpose flour. 1/2 cup almond flour. 1/2 cup rolled oats. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 teaspoon ground ginger. 1/2 teaspoon ground cinnamon. 1/4 cup coconut oil, melted. 1/2 cup pure maple syrup. 1 teaspoon vanilla extract. 1/4 cup almond butter. 1/4 cup unsweetened applesauce. 1/2 cup vegan chocolate chips.
Instructions: Preheat your oven to 350F 175C and line a baking sheet with parchment paper. In a large mixing bowl, whisk together the all-purpose flour, almond flour, rolled oats, baking soda, salt, ground ginger, and ground cinnamon. In a separate bowl, mix the melted coconut oil, pure maple syrup, vanilla extract, almond butter, and unsweetened applesauce. Add the wet ingredients to the dry ingredients and stir until well combined. Fold in the vegan chocolate chips. Using a tablespoon or cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet. Gently flatten each cookie with the back of a spoon.
