For Mother's Day or any other special event, these Gluten-Free Strawberry Balsamic Thyme Galettes are a delicious treat. Sweet strawberries, sour balsamic vinegar, and earthy thyme all tucked into a buttery gluten-free crust are sure to impress. The best part is that they're simpler to make than regular pies!
Ingredients: 1 1/2 cups gluten-free all-purpose flour. 1/4 cup almond flour. 1/4 cup granulated sugar. 1/2 teaspoon salt. 1/2 cup cold unsalted butter, cubed. 3-4 tablespoons ice water. 2 cups fresh strawberries, hulled and sliced. 2 tablespoons balsamic vinegar. 1 tablespoon fresh thyme leaves. 2 tablespoons honey. 1 tablespoon cornstarch. 1 egg, beaten for egg wash. Powdered sugar, for dusting optional.
Instructions: Preheat the oven to 375F 190C. Line a baking sheet with parchment paper. In a food processor, pulse together the gluten-free all-purpose flour, almond flour, granulated sugar, and salt until combined. Add the cold butter cubes and pulse until the mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, pulsing until the dough just comes together. Turn out the dough onto a lightly floured surface and gently knead a few times to bring it together. Flatten into a disk, wrap in plastic wrap, and chill in the refrigerator for 30 minutes. In a bowl, combine sliced strawberries, balsamic vinegar, thyme leaves, honey, and cornstarch. Toss until strawberries are evenly coated. Divide the chilled dough into 6 equal portions. Roll out each portion into a rough circle about 1/8 inch thick. Place a portion of the strawberry mixture in the center of each dough circle, leaving a border around the edges. Fold the edges of the dough up and over the filling, pleating as needed. Brush the edges of the dough with beaten egg wash. Transfer the galettes to the prepared baking sheet. Bake for 25-30 minutes, or until the crust is golden brown and the filling is bubbly. Remove from the oven and let cool slightly before serving. Dust with powdered sugar before serving, if desired. Ingredients: 1 1/2 cups all-purpose flour. 1/4 cup granulated sugar. 1/4 teaspoon salt. 1/2 cup vegan butter, chilled and diced. 4-5 tablespoons ice water. 2 cups rhubarb, thinly sliced. 1/4 cup pistachios, chopped. 1/4 cup brown sugar. 1 tablespoon cornstarch. 1 tablespoon lemon juice. 1/2 teaspoon vanilla extract. 2 tablespoons maple syrup, for brushing. Vegan whipped cream or ice cream, for serving optional.

Spread the chilled dough out on a floured surface and roll it into a big circle that is about 1/4 inch thick. Cut it into squares or circles that are smaller. Spread the dough out on the baking sheet that has been prepared. Put some of the rhubarb-pistachio mix in the middle of each piece of dough. Fold the dough's edges up and over the filling, making pleats if necessary. Spread maple syrup around the edges of the galettes. After the oven is hot, bake the pie for 25 to 30 minutes, or until the crust is golden brown and the filling is bubbling. Take it out of the oven and let it cool down a bit before you serve it. If you want, you can serve it with vegan whipped cream or ice cream.
