Ingredients: 400g boneless chicken breast, thinly sliced. 1 cup chopped walnuts. 1/2 cup breadcrumbs. 2 cloves garlic, minced. 1/2 cup yogurt. 2 tablespoons olive oil. 1 onion, finely chopped. 1 teaspoon cumin. 1 teaspoon paprika. 1/2 teaspoon cayenne pepper. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Place the breadcrumbs and chopped walnuts in a mixing bowl. In a dry pan, toast them until fragrant and just beginning to brown. Put aside. To make the sauce, combine the yogurt, chopped garlic, cumin, paprika, cayenne, salt, and pepper in a different bowl. Put aside. Heat the olive oil in a big skillet or wok over medium-high heat. Add the chopped onion and cook it until it becomes transparent. When the chicken breast is thinly sliced and no longer pink, add it to the skillet and cook it until it begins to brown. Add the breadcrumb and walnut mixture to the skillet and turn the heat down to medium. To evenly coat the chicken, give it a good stir. While constantly stirring, pour the yogurt sauce over the chicken and walnut mixture. Cook the chicken for a further five to seven minutes, or until the sauce thickens and coats it.
