These chocolate oatmeal fudge cookie bars are the perfect combination of chewy oatmeal cookies and rich chocolate fudge. They are easy to make and are sure to satisfy your chocolate cravings!
Ingredients: 1 cup 2 sticks unsalted butter. 1 cup granulated sugar. 1 cup brown sugar. 2 large eggs. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon salt. 3 cups old-fashioned oats. 1 cup semisweet chocolate chips. 1 cup chopped walnuts optional. 1 14-ounce can sweetened condensed milk. 2 cups semisweet chocolate chips. 1/4 cup unsalted butter. 1 teaspoon vanilla extract.
Instructions: Preheat your oven to 350F 175C. Grease a 9x13 inch baking pan. In a large mixing bowl, cream together 1 cup of unsalted butter, granulated sugar, and brown sugar until smooth and fluffy. Beat in the eggs one at a time, then stir in 1 teaspoon of vanilla extract. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the butter mixture and mix until well combined. Stir in the old-fashioned oats, 1 cup of semisweet chocolate chips, and chopped walnuts if desired. Press half of this oatmeal cookie dough into the bottom of the prepared baking pan to create the base layer. In a saucepan, combine the sweetened condensed milk, 2 cups of semisweet chocolate chips, 1/4 cup of unsalted butter, and 1 teaspoon of vanilla extract. Cook over low heat, stirring until the chocolate and butter are melted and the mixture is smooth. Pour the fudge filling evenly over the oatmeal cookie dough in the pan. Crumble the remaining oatmeal cookie dough evenly over the fudge filling layer. Bake in the preheated oven for 25-30 minutes, or until the top is lightly golden brown.
