Ingredients: 1 cup whole wheat flour. 1/2 cup oats. 1 1/2 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1 cup mixed berries strawberries, blueberries, raspberries. 1 ripe banana. 1 cup almond milk or any plant-based milk. 2 tbsp maple syrup. 1 tsp vanilla extract. Cooking spray or oil for waffle iron.
Instructions: Follow the directions that came with your waffle iron to get it hot. Mix the oats together in a blender and blend them until they look like fine flour. Whisk the oat flour, whole wheat flour, baking powder, baking soda, and salt together in a large bowl. Put the ripe banana, almond milk, maple syrup, and vanilla extract in the same blender. Mix until it's smooth. Add the dry ingredients to the wet ones and stir them together until everything is well mixed. You can add a little more almond milk if the batter is too thick. Add the mixed berries to the batter slowly. Spray or oil the waffle iron with a little cooking spray. Pour the right amount of batter onto the waffle iron that has already been heated up. Cook the waffles according to the manufacturer's directions, which are usually between 3 and 5 minutes, or until they are golden brown and crisp. Take the waffles out of the iron carefully and keep them warm while you cook the rest of the batter. If you want, you can top your mixed berry waffles with extra berries and maple syrup.
