This Pesto and Arugula Grilled Cheese is a delightful twist on the classic grilled cheese sandwich, with the bold flavors of pesto and the peppery freshness of arugula. It's quick to make and perfect for a satisfying lunch or dinner.
Ingredients: 2 slices of bread. 2 tablespoons of pesto sauce. 1 cup of shredded mozzarella cheese. 1 cup of fresh arugula leaves. 2 tablespoons of butter.
Instructions: Spread 1 tablespoon of pesto sauce on one side of each bread slice. On one bread slice pesto-side up, layer half of the shredded mozzarella cheese. Add a generous handful of fresh arugula leaves on top of the cheese. Place the other bread slice on top pesto-side down to make a sandwich. In a skillet, melt 1 tablespoon of butter over medium heat. Carefully place the sandwich in the skillet and cook until the bread turns golden brown and the cheese begins to melt usually about 3-4 minutes per side. Press down on the sandwich with a spatula to help the cheese melt and the sandwich stick together. Once both sides are crispy and the cheese is gooey, remove the sandwich from the skillet. Let it cool for a minute, then slice it in half diagonally. Serve your delicious Pesto and Arugula Grilled Cheese hot and enjoy!
