Ingredients: 1/2 cup fresh raspberries. 2 tablespoons fresh lime juice. 2 tablespoons olive oil. 1 tablespoon honey. 1 teaspoon Dijon mustard. Salt and pepper to taste. Mixed salad greens e.g., lettuce, spinach, arugula. 1/4 cup sliced almonds. 1/4 cup crumbled feta cheese.
Instructions: Add the fresh raspberries, lime juice, olive oil, honey, Dijon mustard, and a pinch of salt and pepper to a blender. Blend until smooth. Mix everything together until it's smooth. You can thin out the dressing by adding more lime juice or olive oil until it's the right consistency. If you think the vinaigrette is too sweet or sour, add more honey or lime juice to make it right. Put away. Put the mixed salad greens in a large salad bowl. Sliced almonds and feta cheese crumbles should be put on top of the greens. Just before you serve the salad, drizzle the raspberry lime vinaigrette over it. Gently toss the salad to make sure that the dressing and toppings cover all of the greens. Serve right away as a cool summer salad.
