Ingredients: 1 lb dried red beans, rinsed and soaked overnight. 1 lb smoked sausage, sliced. 1 onion, diced. 3 cloves garlic, minced. 3 stalks celery, chopped. 1 green bell pepper, diced. 4 cups chicken broth. 2 bay leaves. 1 tsp dried thyme. 1 tsp dried oregano. Salt and black pepper to taste. Cooked rice, for serving.
Instructions: In a slow cooker, combine soaked red beans, sliced sausage, diced onion, minced garlic, chopped celery, diced bell pepper, chicken broth, bay leaves, dried thyme, dried oregano, salt, and black pepper. Stir well to combine. Cover and cook on low for 8-10 hours or on high for 4-5 hours, until beans are tender. Before serving, taste and adjust seasoning if necessary. Serve over cooked rice.
