Dlaczego cebula robi się gorzka po krojeniu? Nie chodzi tylko o świeżość
Jeszcze do niedawna myślałem, że jeśli cebula robi się gorzka, to po prostu trafiła się gorsza partia. Raz była dobra, raz nie – normalna sprawa.
Ale zacząłem zauważać pewien schemat. Najczęściej problem pojawiał się wtedy, gdy kroiłem cebulę i zostawiałem ją na później.
Po kilku godzinach:
smak był ostry i nieprzyjemny
pojawiała się wyraźna gorycz
zapach robił się dużo bardziej intensywny
Na początku ignorowałem temat, ale z ciekawości zacząłem sprawdzać, o co chodzi.

Okazało się, że po krojeniu zachodzą reakcje chemiczne, które wpływają nie tylko na zapach, ale też na smak.
Największy problem? Sposób przechowywania.

zrozumiałem, co robiłem źle.
Najważniejsze rzeczy, które zmieniłem:
nie zostawiam cebuli odkrytej
używam szczelnego pojemnika
staram się zużyć ją jak najszybciej
Różnica jest naprawdę duża. Cebula dużo dłużej zachowuje normalny smak i nie robi się tak gorzka.
Podsumowując – to nie kwestia “złej cebuli”, tylko tego, co z nią robimy po krojeniu.
