It's easy to make and tastes great. This One Pan Greek Lemon Chicken Rice with Roast Garlic is full of Mediterranean flavors. A tasty meal is made in one skillet with tender chicken, fluffy couscous, roasted garlic, and a zesty lemon twist.
Ingredients: 4 boneless, skinless chicken breasts. 1 cup couscous. 2 cups chicken broth. 1 lemon, zested and juiced. 4 cloves garlic, minced. 1 red onion, chopped. 1 cup cherry tomatoes, halved. 1/2 cup Kalamata olives, pitted and sliced. 1/4 cup feta cheese, crumbled. 2 tablespoons olive oil. 1 teaspoon dried oregano. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Turn on your oven and heat it up to 375F 190C. Heat the olive oil over medium-high heat in a large skillet that can go in the oven. Add salt, pepper, and dried oregano to the chicken breasts. In the pan, sear both sides of the chicken breasts until they are golden brown. Take them out of the pan and set them aside. Put the minced garlic and chopped red onion in the same pan. Add the onions and saut for a few minutes, until they become clear. Add the couscous and stir it in. Cook for two more minutes to let it soak up some of the flavors. Add the lemon juice, lemon zest, and chicken broth. Use a stir to mix. Place the chicken breasts that have been seared back into the couscous mixture in the pan. Cut the cherry tomatoes in half and place them around the chicken. Place the skillet in an oven that has already been heated and cover it with a lid or aluminum foil. Put it in the oven and bake for 20 to 25 minutes, or until the chicken is done and the couscous is soft. Take the dish out of the oven when it's done and up some feta cheese to put on top.
