Mike, his mom, and Jonah, flew to Florida to visit family and go to Mike's cousin's wedding. Graham, Olive, and I held down the fort at home. Sadly Mike and Cindy were sick most of the visit but they still managed to have some fun. Many thanks to Mike's aunt Sue for taking good care of Jonah and showing him a great time while his daddy and grandma were sick. Jonah's favorites things were his surprise cupcake birthday party, a golf cart ride around the lake with his dad, and best of all--Legoland, which he's been wanting to go to for a couple years. Jonah said that it was the "best fun he's ever had."

I can't remember how I stumbled upon Deliciously Ella's blog, but I do know that I have loved almost everything she posts! Ella is a food writer based in London who's currently studying to become a nutritionist. Through her writing, Ella's inspired me to go even further in my quest to live a healthy lifestyle. I love how she builds all of her recipes around simple "super foods" - such as avocados, pomegranates, sweet potatoes, almonds, beets, dates, chia seeds, etc - and the result is very colorful, nutritious, and satisfying!
Over the weekend, I visited my parents back home in Florida. My dad has taken an interest in my blog :) and wanted to see what the process was all about - so I thought no better way than to create a post together. We were craving something sweet after lunch one afternoon and decided to make Deliciously Ella's "Ultimate Energy Bites." The recipe is super simple because you literally place everything in a food processor, blend for a few minutes, roll into little bites, and then refrigerate to set. We sprinkled some coconut on top at the end. Think we'll try blending shredded coconut into the mix next time. The energy bites are the perfect snack or mini dessert. The dates provide sweetness, almonds + walnuts the protein, chia seeds the Omega-3 fatty acids and fiber, cacao powder the chocolate flavor :) and the coconut oil binds it all together.
What was especially fun about making this treat was taking the photos! My dad and I took advantage of the late afternoon Florida sunshine and brought the wooden cutting board with all our ingredients out into our back patio to shoot in the natural light. I give my dad full credit for the second photo of the final product :) Think he did a fantastic job capturing the color and texture of each little bite.
When I think about sources of inspiration to begin my own blog - Ella from Deliciously Ella definitely comes to mind. Ella, I wish you continued success and I thank you for sharing your journey with us! I look forward to picking up a copy of your first cookbook when it hits the stands!
